Green Bean and Carrots with Cranberries

Serves two.

all I got is…
4 carrots
2 cups green beans cut into small pieces
1 teaspoon garlic powder
Dash of chili powder
Salt and Pepper to taste
1/2  or 1/4 cup dried cranberries

Steps
1. Dice the carrots into small pieces.
2. Saute the carrots in pan until they are cooked, but not soft. A little hardness needs left.
3. Add the green beans to the carrots and cook until warmed and to the softness of your liking.
4. Add the chili powder and garlic while the beans are cooking.
5. Add the cranberries and cook the carrots and green beans for about another minute.
6. Enjoy.

So simple yet so good.





Cauliflower Casserole

All I got is
* One head of cauliflower
* 1 cup mayonnaise
* 1 cup grated swiss cheese
* 1 (10 3/4-ounce) can condensed cream of mushroom soup or cream of chicken
* 2 cups crushed crackers
* 2 tablespoons butter, melted

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

Combine all the ingredients besides the crackers and mutter.
Put your yummy mixture into a baking dish. Top with the crackers crushed that you have mixed with the melted butter. Bake for 35 minutes or until browned.

You can also add two beaten eggs into the casserole.





Christmas is Over and Boy Am I Whipped Pumpkin

1 tsp vanilla
2 tsp maple flavoring
1 1/3 cups brown sugar
1/2 cup milk or cream
4 cups canned pumpkin or fresh pumpkin mashed
Crushed Nuts (optional)

1. Preheat oven to 350
2. Put the mashed pumpkin in a bowl and add the vanilla, milk, maple flavoring, and 1/3 cup of the sugar.
3. Beat with an electric mixer for 3 – 4 minutes.
4. Put the pumpkin in an oven proof baking dishes and top with remaining sugar. Nuts can also be added to the top.
5. Bake in the oven for 30 minutes or until heated through.
