Dump Pasta
2 cups Pasta noodles of choice
Leftovers of choice (the choice of mine, you can vary it)
Rice – 1 cooked cup
Chicken cooked – one piece
Mashed black beans – 1/2 cup
Cheddar cheese- 1/2 cup
Parmesan cheese – 1/4 cup
Sour Cream – 3 tbsp

1. Start cooking the pasta.
2. While the pasta is cooking cook all the other items, except the cream and cheese.
3. When the pasta is cooked and drained add the cheese to the pasta.
4. Add the cooked mixture to the cheesy pasta.

5. Finish it with some sour cream on top.
5. Enjoy.

See just dump what you have in the fridge on top of your pasta, so tasty.





Pasta with Black Bean Bacon Pumpkin Sauce

Pasta with Black Bean Bacon Pumpkin Sauce
Ingredients
6 slices bacon
2 cups diced pumpkins or squash or one small pumpkin or squash
Noodles (egg noodles)
1 can black beans – reserve about 1/4 of the bean water
3 tablespoons tomato paste
1/2-cup water
Steps
1. Cook the bacon and then chop it into small crumbles.
2. Cook the pumpkin in a pan until tender.
3. Add to the pumpkin the black beans and bean water.
4. Add the tomato sauce and enough of the water to make a thick sauce.
5. Cook the sauce until it is warmed through.
6. Cook the noodles and drain them.
7. Add the cooked bacon to the drained noodles.
8. Toss the pasta and bacon with the sauce.

Taco Pasta

Taco Pasta

Ingredents

Pasta (any kind that is not a spagehiti or feticunes, so elbow, spiral, rigotnia)

One pound Ground Beef

2 Cups Shredded Cheddar Cheese

1 tomato diced or I can tomatoes diced

1 onion

Taco Seasoning

2 Cups Shredded lettuce

Directions

  1. Dice 3/4 of the onion (save the extra) and cook the onion in a pan until it starts to sweat.
  2. Add the ground beef and fry until cook through.
  3. While the ground beef is cooking boil water for the pasta.
  4. Cook the pasta according the directions on the package. Then drain the pasta.
  5. Add the taco seasoning to the beef and cook for five additional minutes.
  6. Drain the cooked beef.
  7. In a large bowl add the cooked pasta and beef.
  8. To the pasta add the extra onions and tomatoes. Then toss.
  9. Top the pasta with lettuce and cheese.
  10. Enjoy

You can heat the pasta in the oven in a baking dish to melt the cheese before serving.

Pasta with Ground Beef, Mozzarella cheese , and Feta Cheese Sauce

This is for one or two people. It could be made for more by doubling or tripling the recipe. Measuring is not always needed when cooking for the family. There are some measurements in the recipe as only a guide. Do what you feel is right.

Not perfect, taken with a digital camera, shaky, and that is ok! Live Life!!





Coconut Bean Rice with Chicken

All I had was

Chicken, coconut milk, can of black beans, rice and some spices.

Steps

1. Make the rice according to the package directions. Make as much as you would need for the servings needed. Add half water half coconut milk and a 1/4 cup of extra coconut milk.

2. Cut the chicken into small cubes and fry until cooked all the way through.

3. When the rice is fully cooked add one can of black beans.

4. Add to the rice some pepper, salt, and garlic to taste.

5. Put the rice and beans on a plate and top with the chicken.

6. Eat it!

Left Over Lunch

I just love throwing together some leftover food and making a new dish. Today I made pasta with cabbage and broccoli.

Get a pan warm on the stove- you know preheat.


Take a head of cabbage and chop the cabbage. About enough for one person 1 to 2 cups worth.


Put the cabbage in the pan and stir. Stir, stir and stir some more. Cook the cabbage until it is just tender.


Add some teriyaki sauce. Then stir and stir.


Add some broccoli and warm it in the pan. Make sure to stir.


Next add some already cooked pasta. Guess what? Stir it more. Warm the pasta.

So simple, but so good. Five minutes (or so) to a perfect lunch. So easy, yet so good.

Lasagna Rolls with White Cheese Sauce

What I had today was going to be good. I saw some recipes for Lasagna rolls on the Internet. I also did not have any tomato sauce, but some white sauce in a bottle. (Not Alfredo). I did not print the recipe or try to do it just like I saw it. I did kind of change the recipe to make it my way and a little faster. Hey no measuring need.

You need some
Lasagna noodles, spinach, ricotta cheese, parmesan cheese, sauce

First set the oven to 350. I always forget to do this.


Then get out your food processor. Got to love the 70’s baby. You can mix it by hand and chop if you like. This is my change, not sure for the better, but I will make it the other way later and see.

Add some spinach, ricotta cheese, and mozzerila cheese to the food processor. Then process.

Don’t forget the egg.


Then boil some water. Boil it hard. Then add your lasgna

Next put some of your sauce on the bottom of your baking dish.

Time for rolling the noodles. Lay out one noodle then add some of the spinach sauce on top and roll it up.

Line all of your rolls up in your baking dish. Put the roll in the pan seam (open side) down. Look at all those rolls, what goodness. I think maybe two or three rolls a person.

Then add some sauce and cheese on top.

Last bake in the oven covered in foil for about 30 minutes.
