4. Next, scrap all the goodness from the bottom of the pan. If you skip this step the final product will not be the same. The goodness is the life so bring it to the party.

See look at all that really good bits. Look! I mean look hard really look study it.

5. Next add the can of coconut milk. I added the whole can and had problems later, so maybe add half the can and then more if needed.

Ingredients

2 pounds ground beef

14.5oz can diced tomatoes

1 1/2 cup tomato sauce

1/3 cup chopped olives

1/2 chopped onions

garlic

oregano

basic bread dough (try this one) (or this one)

Steps

Preheat the oven to 375

1. Brown the beef, drain, return to pan.

2. Add the diced tomatoes, tomato sauce, and olives to the beef.

3. Stir in the onions, garlic, and oregano.

4. In a 9 inch x 13 inch oven safe rectangular pan add the beef mixture

5. Top this mixture with the bread dough. You have a choice to use either half the bread dough mixture or all of it. All of it makes a pretty high bread topping.

6. Bake for 30 – 40 minutes or until the bread is golden brown.

I decided to use all the bread dough in mine, look how high it is!

More info and recipe soon.
Mini Preview
Meat Pies
Biggest Changes in this recipe is the dough is made more like a bread dough, than a biscuit dough.  The dough also has parsley, garlic, and onions in it. The meat has tomato paste in it.  Not as dry as traditional meat pies.

If you don’t  have the recipe and have never made it you can not mess it up.

Slow Cooker Chicken with Rice

10 10 2008

BBQ Chicken to Pull or not to Pull

15 09 2008

The word easy makes a recipe easier, really it does. Really!

All I got is

Chicken – enough pieces for one per person and one extra. Boneless Breasts work best

BBQ sauce (any kind)

1 tsp chili powder

1/4 cup onions (finely chopped)

salt/pepper

2 tsp parsley

1. Boil the chicken in a pot of boiling water or grill the chicken

(kind of boiling)

2. In a large bowl add the onions, chili powder, and parsley.

3. Once the chicken is cooked all the way through. Take the chicken and set it on a cutting board to cool for five minutes. You can not bull the chicken apart or chop it into smaller pieces. There are two schools on this one to pull or to chop. Both are fine. So do either some do both. That is best really, a little of each.

4. Add the chicken to the onion mixture.

5. Add enough BBQ sauce to cover the chicken. So about 1 cup.

6. Mix well and salt and pepper to taste.

7. Eat it right away as a hot dish or put it in the fridge for a couple of hours or overnight.

Shrimp with Coconut Sauce

2 09 2008

I did not anyone to think I was making coconut shrimp, the breaded deep fried kind.

What you need

Garlic

Salt/Pepper

Onions

Shrimp (enough for everyone to have a healthy portion)

Coconut Milk (one can unless you are making it for lots of people)

Steps

1. Add oil or cooking spray to your pan and then lightly fry the onions

2. Add the shrimp and garlic to the pan and warm slightly (1-3 minutes)

3. Add the coconut milk and reduce the sauce. You can reduce it as much as you like. Saucy or Not Sauce.

4. Salt and Pepper to taste. That means taste it and add as much salt and pepper as needed. Hey you probably did not need to know that, but hey my fingers are flying.

5. Put it on a plate and eat it. I like it over rice.

I used small shrimp that was frozen and had no shells on it (I did unfreeze it first). You could use jumbo shrimp with shells on it. You need enough for each person to have a good sized portion. I say look at how much you have and divide it among as many as you are feeding. Maybe also look at the back of the package for serving sizes. I hate measuring.
