Hashbrown Skillet Bake

What you need:

Hash brown potatoes (julienned potatoes), you can use the store bought ones

2 eggs

1 – 2 cups colby jack cheese

garlic – 2 or more cloves chopped

onion – half of one diced

salt/pepper

cooking oil

What you need to do:

1. In a large pan put some oil (about 1/4 cup) and heat it. When it is hot add the hash brown potatoes.

2. Cook the potatoes for five minutes – no stirring

3. Flip the potatoes  and continue to cook them on the other side for about 3 minutes.

4. In a small bowl beat the eggs with the onions, salt, pepper, and garlic.

5. Add the egg mixture on top of the potatoes and cook it until the eggs have set up.

6. Flip the potatoes.

7. Top the potatoes with 1 – 2 cups of colby jack cheese. Cook the cheese until it is melted.

8. No you are done you can remove it and eat it. Enjoy! Yummmmy!

Tips: When flipping the potatoes you want them to stay together, especially towards the later stages, so either use one extra large spatula, two spatulas, or a plate and some hot pads. Also, use a lid to cover the dish when trying to get the cheese to melt.

Look at all that cheese, yum. You could do less cheese and no last flip. So good it is one breakfast in one dish. Mouths are going to explode.  15 extra minutes on the treadmill today!
