Muffins – 3 Different Ways

Make regular, cranberry, pumpkin muffins using the same basic recipe.

What you need:
1 3/4 cups flour
3/4 teaspoon salt
1/2 cup sugar
2 teaspoons baking powder
2 eggs
2 tablespoons melted butter (cooled)
3/4 cup milk

For cranberry muffins
1 cup dried cranberries or chopped fresh cranberries

For pumpkin muffins
1/4 cup more sugar
1 tablespoon cinnamon
1 cup canned pumpkin

Steps
0. Preheat over to 400
1. Combined the flour, salt, sugar, and baking powder.
2. In another bowl combined the eggs, milk, and melted butter.
3. Combined the liquid and dry ingredients together using a few strokes, do not over mix.
4. Fill prepared muffin tins.
5. Bake for 20 – 25 minutes.

For Cranberry Muffins
add the cranberries when your are miking the dry and wet ingredients together.

For Pumpkin Muffins
Add the pumpkin, cinnamon, to the wet ingredients before mixing it with the dry ingredients.
Add the extra sugar when you add the rest of the sugar to the dry ingredients.
